Hello! My name is Lynn and I am your registered dietitian resource! This blog is a collection of recipes that I have made over the years for me and my husband. I am very lucky to have a husband who is always willing to try something new! Growing up, he was never a picky eater – probably because he ate so much there was no way he could be picky! While his appetite has decreased dramatically since he stopped playing football and baseball, thankfully his “I’ll try anything” mentality hasn’t changed a bit. This works out well for me (and you!) because he lets met experiment with recipe makeovers and completely new dishes. My goal is to make hearty meals that are delicious, nutritious, and affordable!
Healthy on a Budget
Many people tell me that it is too hard and expensive to cook healthy meals. This couldn’t be further from the truth. One problem I often find is that people aren’t being smart with that they buy; don’t buy organic red peppers and pea pods in January – instead make meals with sweet potatoes and carrots. Shop at your local farmers marker. Take advantage of the crock pot’s “prep it and forget it” ability. Buy in bulk so you can make double batches and freeze some for later. And last, but not least, purchase frozen vegetables once and a while – research shows they are just as healthy as fresh and is often 1/2 the price, so don’t forget about this option!
