Artificial Pancreas??

It looks like researchers are getting ever closer to finding an effective treatment for type 1 diabetes. A small study published in the New England Journal of Medicine looked at the use of an artificial pancreas in a small group of campers.  They found that when the campers used the artificial pancreas they had fewer low blood sugars over night. Hopefully this is a big step forward!

Beer Bread

photo (7)I made this bread and wanted to share a picture and some notes.

All in all, the bread is pretty good. It is SUPER easy to make, which is a plus. It took less than 10 minutes to mix things together and get it into the oven. It was extremely moist and had a wonderful texture. The beer bitterness took some getting used to, but after a few slices I was hooked. I could see how it would be really good with a cheesy dip (stay tuned for a semi-healthy cheesy dip in the near future, hopefully).

The original recipe calls for 1/2 cup of butter but states you can get away for 1/4 cup. Honestly, you could get away with 1/8 cup (2 TBSP). This was SUPER buttery and I can’t imagine what it would be like with twice what I used.

Be sure to shift the flour (or at least fluff with a fork). The original recipe has many notes from people who tried the bread and it was too dense.

I plan to to try this recipe again soon with a few modifications – less butter and the addition of some tasty herbs. I’ll update again if I have anything new to share about it.

Homemade Girl Scout Samoas

These are not healthy. At all. But this recipe is one of those things that when you see it you can’t NOT do something about it.  The recipe is by Just a Taste, which I found on pinterest. Oh, how I love pinterest – I am pretty sure I’d be a much better med student if it didn’t exist…but my belly, husband, and blog would not be nearly as happy. Save this for a rainy day and enjoy in moderation.

Gluten Free Pantry List and Helpful Blog!

Have you recently started eating gluten-free? Finding out you have celiac disease or gluten intolerance makes many people feel completely lost. All of the foods that are ingrained (no pun intended) in our culture seem to contain gluten, so many people following a traditional American diet feel like there is nothing they can eat. This couldn’t be further from the truth! While grains can be delicious, it usually isn’t the grains themselves that are delicious  but the things we put in or on them. For instance, when was the last time you ate plain pasta? Probably never. If it is the stuff that we put on top that we like so much, this new diet becomes much easier and more manageable.
